Sorbitan monostearate (SMS)is an ester of sorbitan and stearic acid. It is a hard plastic emulsifier that requires melting to add to food. It is a very fat loving emulsifier.
Sorbitan monostearate is an emulsifier with an HLB ratio of 4.7. It is a very good in crystal retardation in chocolate, coatings and in cakes. It is an alpha tending emulsifier as well. It is not commonly used, but it is an excellent emulsifier for cake creating a very fine grain, increased volume. Sorbitan monostearate is also used in the manufacturing of dry yeast to help with the re-hydration and survival of the yeast.
