Acetic acid esters of monoglycerides or acetylated monoglycerides is an emulsifier in which acetic acid is bound with monoglycerides. It has very little emulsifying properties. It is extremely stable under heat. It is able to expand by 8 times under tension. It is good at foaming fats due to its stable alpha structure. It is an excellent plasticizer and is used in margarines to keep the fat plastic over a wide temperature range.
Acetylated monoglycerides are used in bread products to help with expansion of the bread during proofing and baking. Acetylated monoglycerides can have a significant effect on the finished volume of the bread.
