Propylene glycol monoesters or PGME is a group of emulsifiers because the ester is not specified. The most common is propylene glycol monostearate of PGMS.

Propylene glycol monostearate is lipophilic emulsifier commonly used in cake due to its properties. Propylene glycol monostearate is an efficient cake emulsifier due to its formation stable alpha gels in the presence of water. Propylene glycol monostearate helps incorporate air into cake batter which helps in the cake structure. Propylene glycol monoesters are commonly used with monoglycerides which has superior aerating properties. Blending 3 of the common alpha tending emulsifiers, propylene glycol monostearate, monoglycerides and polyglycerol esters produces a very synergistic effect in cake.

Propylene glycol monostearate is also used in whipped toppings for aeration.

Propylene glycol monostearate also has dough relaxing characteristics in yeast raised dough.
